Lassi/How to make lassi

Lassi is a blend of dahi and sugar and it originates from Punjab. We can get authentic lassi in UP, Punjab,Haryana ,Delhi, and Rajasthan. Generally, lassi means sweet lassi. But there are different varieties like mango lassi,salt lassi ,masala lassi,papaya lassi ,and banana lassi . Roti dhal  subzi and lassi would be a complete meal in summer. Ingredients

Dahi     - 2 cup
Sugar   - 2 Tsp
Cardomom powder- A pinch
Pistachios  -2

Method

The curd should be chill. Use full cream milk to prepare curd.
Use the traditional blender to blend the curd.
If you feel it is difficult you can also use a hand blender or mixie.
Beat the curd till smooth and frothy.
Add sugar and cardamom and pistachios and again beat it until frothy.
Pour this into the glass and serve chill.

Samai paniyaram/How to prepare samai paniyaram

Ingredients
Samai rice    2 cups
Urad dhal     1/2 cup
Sabudhana   2Tsp
Fenugreek    1/2Tsp
Green chillies-2
Salt
Asafoetida  -1/2 Tsp
Mustard   -1/2 Tsp
Oil
Curry leaves  -1Tsp
Ginger   - 1Tsp



Method

Soak samai rice ,sabudhana,urad dhal and fenugreek for three hours.
Wash and drain
Grind all the four ingredients to a soft batter.
Add salt and keep it aside for 5 to 6 hours.
Heat oil in a pan and add mustard,ginger,onion,green chillies,asafoetida and fry for a minute and add this to the batter.
Heat paniyaram pan and spread oil .
Pour the batter in each hole, cover and cook for a minute.
Now flip the paniyarams with a fork and again cook for a minute and collect it in a plate and serve it with chutney.

Drumstick leaves poriyal/Murungaikeerai poriyal

Generally we can see drumstick trees in many houses nin south india. All the parts of this tree has medicinal value.It has Iron,phosporous,protein,calcium,carbohydrates,and vitamin A,C. Drumstick soup is very nutritious and build immunity. Diabetes patients can take drumstick leaves as it helps to reduce the sugar level in the blood. It also helps in elimination of hair loss,grey hair and helps in good blood circulation.




Ingredients

Drumstick leaves     - 1 cup
Salt
Coconut                   - 3 Tsp
Sugar                        -1/2 Tsp
Onion chopped         -1/2 cup


For seasoning

Oil   - 2 Tsp
mustard   -1/4 Tsp
Urad dhal    _1/4 Tsp
Benhal gram  -1/4 Tsp
Red chillies -1

Method

Separate the leaves from the stem and collect it in a cup and wash and drain it in a sieve.
Heat oil in a pan add all the things that is given for seasoning one by one.
Now add onion , salt and fry for a minute.
Add drumstick leaves and cook in a slow fire for 5 minutes , when the water is dried completely add sugar and coconut and switch off the stove .
Serve hot.

Cheese toast/ How to prepare masala cheese toast

Ingredients

Bread - 5
Onions chopped - 3 Tsp
Mixed vegetables- 1/2 cup
Green chillies-2Tsp chopped
Chilli powder-1/2 Tsp
Oil                 - 3 Tsp
Potato   -1
Garam masala-1 Tsp
Coriander chopped -2Tsp
Salt
Mozarilla cheese


Method

Boil mixed vegetables and potatoes. Mash the potatoes.
Heat oil in a nonstick pan and add onions and fry for a minute.'
Add chillies, mixed vegetables,potato,chilli powder,garam masala and salt coriander and mix well .
Cook in a low flame for 2 minutes.
Allow it to cool and divide it into 5 balls.
Spread one portion on each bread and sieve the cheese on top of this.
If you have an oven you can bake these toast in a preheated oven for 5 minutes. 
If you don't have an oven you can heat a non-stick pan, apply little butter and spread all the five pieces of bread with toppings and cook on a low flame until the cheese melts and serve.
